Why the fuss about chicken?

Someone told me that I should pretty much start this blog off with a joke.. there are so many and they are so bad! I had to settle for this one:

Q: “why did the chicken have to wash his mouth out with soap”
A: “because of all the fowl language”

Oh dear!

Jokes aside, chicken is such a popular meat, it’s scary. Consumption of chicken in Australia has slowly increased over the years and, as mentioned in my previous blog, we are eating about 45 Kg of the stuff per person each year.

So why is chicken so popular?

My day out : Chicken Farm and Processing Plant - from Farm to Fork.

This week, I was fortunate enough to take part in a media tour of a chicken farm and processing facility, hosted by Australian Chicken Meat Industry and Ingham’s Enterprises. I was in two minds about going, being that it was smack in the middle of the school holidays but then thought to myself “when am I ever going to get the chance to go to a chicken farm again???” I think it’s really important for all of us to have a good grasp of where our food comes from and of the processes involved in getting it from Farm to Fork.

Chicken with Red Wine and Grapes- and its Low Carb!

Ive been getting a few requests for interesting low carbohydrate recipes for those who are watching their weight or trying to control blood sugar levels. There is nothing wrong with reducing the amount of carbohydrate that we eat, (and goodness knows lots of people are guilty of loading their plates up with too many), as long as there are some good low GI sources taken in the day. Its all about balance.
I like this recipe and it has about 7.5g carbohydrate and 440 Kcals per serve. Should only take 30 minutes to cook.

Roasted Chicken with thyme, red onions and butternut squash

One of the things Ive never been able to get quite right is the perfect roast chicken. This is a cheat’s roast chicken, using chicken pieces that works every time and comes out looking fabulous and tasting great. You can reduce the fat content by making sure you choose skinless chicken pieces (or ask your butcher). A lovely meal for the evening or as a sunday lunch.

Should I eat "white meat" rather than red?

There used to be a time when the recommendation was to avoid red meats and go for “white meat” when considering cholesterol and cardiovascular risk. The usual fare for people trying to keep their fat intake down was chicken, chicken and more chicken!
But it doesnt necessarily need to be all “white meat”.
