Don't feel like a salad in the cold?

Over the last few weeks, the temperature has definitely dropped here! Last Saturday morning, I spent a cold half hour scraping ice from my car windows. Yes, winter is here.
A lot of my clients are finding the cold weather a bit challenging when it comes to sticking to lunchtime salads. It’s true that when it’s cold, sometimes a salad doesn’t quiet “cut it”. It’s important to keep eating those vegetables though! You could try soup, (which I have nearly every day for lunch in this weather),or go for a warm salad.
There are lots of really lovely warm salad recipes around. I think it’s much more fun to invent your own.

Easy Lunches - Chickpea Salad

I seem to have gathered quite a collection of cans of chickpeas. The only reason I can imagine is that I must have been going through a strange “prepper” phase. I do love chickpeas, though, so I’d say the truth is that I just said “oh, I could use these” and popped a tin in the cart each time I have been shopping. No problem, finding things to do with chickpeas is fine with me!
So, chickpea brownies? hummus? Curry? Not this time.

Now I am in the land of salads, I have a whole lot of great recipes to try. This one is timely with a recent study in the US showing that the mediterranean diet may lower the risk of memory problems in later life. And you can’t beat this for a mediterranean style salad.

Too cold for salad? Never! Here is a lovely warm salad to have on cold winter days.

This salad has lots of warm and welcoming mediterranean ingredients to help your forget the frost outside. Peppers, or capsicum where I am from, are a rich source of vitamins A and C. Feta cheese is a good source of Protein, Riboflavin, Vitamin B12, Calcium and Phosphorus. It can be a little high in sodium so if you are watching your salt, you could substitute chickpeas

Mackerel and beetroot salad

This salad is my pick of the bunch for a healthy lunch that will sustain you throughout your afternoon. New potatoes have a low GI (and even more so when left to cool) and beetroot is not only high in high in antioxidants but also contains potassium, magnesium, iron, vitamins A, B6 and C, and folic acid. Walnuts are also jam packed with antioxidants and are a rich source of fibre, B vitamins, magnesium and omega 3 fatty acids.

All in all its a pretty powerful package and tastes great too!
